
Cookie Dough:
1 1/2 cups all-purpose flour
1 bar (1.5 ounces) Godiva® Dark Chocolate, finely grated (about 1 cup)
1/4 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup sugar
1 egg, at room temperature
1 teaspoon vanilla extract
1/2 cup Godiva® Hot Cocoa Powder, Dark Truffle Flavor
Toffee Ice Cream filling:
2 pints good-quality coffee or vanilla ice cream or Godiva® Milk Chocolate Ice Cream, softened
4 bars (1.5 ounces each) Godiva® Milk Chocolate with Almonds and Toffee, coarsely chopped
Garnish:
2 bars (1.5 ounces each) Godiva® Milk Chocolate with Almonds and Toffee, coarsely chopped
Make Cookies:
1. Mix flour, grated chocolate and salt in medium bowl. Set aside.
2. Beat butter until creamy using of electric mixer. Gradually add sugar and beat about 2 minutes or until light and fluffy. Reduce speed to low. Add egg and mix well, scraping down sides of bowl. Beat in vanilla. Gradually add cocoa powder, mixing until blended. Add flour mixture in 2 additions, mixing just until blended.
3. Divide dough into 2 portions and place each between 2 sheets of parchment or waxed paper. Using a rolling pin, roll dough into 1/4-inch thickness. Refrigerate dough between parchment paper at least 2 hours.
4. Heat oven to 375ºF. Line 3 baking sheets with parchment paper.
5. Cut out about 24 cookies using 3-inch flower or scalloped-shaped cookie cutter and place 1/2-inch apart on prepared baking sheets. Prick the surface of each cookie several times with a fork.
6. Bake for 8 to 10 minutes or until cookie surface appears dry and no imprint remains when lightly touched with finger. (Cookies will be soft -do not overbake.) Cool cookies on a wire rack. Repeat with remaining dough, refrigerating if necessary.
Make Toffee Ice Cream Filling:
Place ice cream in a large bowl and let sit for 5 minutes or until slightly softened. Stir in chopped candy bars.
Assemble Sandwiches & Garnish:
1. Turn 12 cookies upside-down so flat side is facing up. Quickly scoop about a heaping tablespoon of ice cream and place on each cookie. Top each with another cookie to make a sandwich. Press cookies together lightly to force ice cream to the edge. Immediately place in freezer.
2. Place finely chopped candy bars for garnish on waxed paper. Roll sandwiches into chopped candy bars to coat the sides. Wrap each sandwich in plastic wrap and freeze until ready to serve.
